I started yesterday with a big old pot of 3-Bean Side Dish -
a while back I had picked up a bag each of red beans, white beans and black
beans, and soaked them overnight. I had them put them up in 2-lb containers in
the freezer. I grabbed 2 of those and defrosted them. Then yesterday I tossed
them into the crockpot along with one can of petite diced tomatoes, one can of
Rotel (original), a tablespoon of cumin, and 3 chopped carrots. I cooked them
into loving softness. Then I divided it into serving containers of 2/3 cup per
container, labeled and froze them.
The other day I ran into a wild deal at Albertsons when I
was picking up some really cheap blueberries. Right next to them, they had an
in-store special of one-pound bags of whole fresh cranberries for just
fifty-cents each! I am so sorry now that I didn't pick up more than the two
bags I bought.
Anyhow, I rinsed them, and tomorrow I plan to toss them in
the crockpot and simmer them, along with one or two diced apples and a couple
of diced pears. That way I won't have to add sugars or honey or sweetener of
any kind - the apple and pear sweetness should offset the tartness of the
cranberries. When it is nice and saucy, I'll divide it into containers and I'll
have a sort of home made cranberry sauce or relish or whatever. I can add it to
anything. Can't wait to try and taste this.
Oh, I do love crockpot cooking...I do, I do!
